Melon de Bourgogne:  Melon de Bourgogne is most commonly grown in the Loire Valley in France and is the grape variety behind Muscadet wines.   It is a naturally high yielding grape which produces very dry white wines with a distinctive mineral feel as well as almost neutral-flavored fruit characteristics.  During the winemaking process Melon de Bourgogne can be left on the lees for the winter between fermentation in autumn and bottling in spring. This allows the wine to develop a fuller flavor and is known as Muscadet Sur Lie. It's the perfect match for seafood.
